The concept behind Chicha is ambitious and brilliant: to open a high-quality restaurant of regional cuisine in every major city in Peru. Chicha Cusco was the first one to open, Chicha Arequipa followed soon after. The idea, of course, came from Peru’s top chef Gastón Acurio, creator and owner of some of the country’s best restaurants: Astrid & Gastón, La Mar, and Panchita. At every Chicha restaurant you’ll find the best culinary tradition of the city (and the region) it’s located in. Moreover, all ingredients (that is, 100%) are bought from local producers, under a fair-price scheme to secure maximum quality. The cuisine of Chicha is, obviously, typical cusqueña –with a nouveau twist. Some delicious dishes include pizza of rocoto relleno, Andean corn pie, and a marinated pork loin with fava beans and a sauce of black pepper, honey, and mustard seeds. The atmosphere of Chicha is elegant yet warm, with a nice bar, a beautiful beamed ceiling, and phographs of typical Andean ingredients covering the walls.
