Almost unknown until recently, Peruvian Cuisine is slowly but steadily conquering the palates of the most renowned chefs worldwide. So much, a world gastronomy tour is now unthinkable without a succulent stop in South America's culinary capital: Lima. Peru's wild choice of fresh ingredients and the gentle blend of immigrant traditions -such as Spanish, African, Chinese, or Japanese- have created one of the World's most unique and delicious cuisines. Enjoy!

Peruvian Cuisine Highlights

A brand new Glossary of Peruvian Cuisine, including terms, ingredients and dishes. Now you'll know what we talk about when we talk about huacatay, ají mirasol, chifa or conchas negras.

Though the origins of Peruvian Cuisine can be traced back to Pre-Inca cultures, one of its most significant contributions is quite recent and owed to... the Nikkei (the Japanese immigrants and their descendants)!

La Mar, the cevicheria created by Gastón Acurio (Peru's top chef), is probably the hottest lunch-spot in Lima during this summer.

Looking for traditional Peruvian Criollo fare? For sure José Antonio or Las Brujas de Cachiche will meet all your expectatives.

Peruvian, French, and Italian cross-over cuisine for MAP Café, set within the colonial patio of Cusco's Pre-Columbian Art Museum.

Our favourite Japanese this year: Edo Sushibar, fabolous sushi with a Peruvian touch (or two)!

Summer in Lima (mid December - mid March) isn't complete without the fantastic three: ceviche, causa, and tiradito.
