Glossary of Peruvian Cuisine
Most Common Terms, Dishes, and Ingredients.

Causa: One of Lima's favourites, this appetizer is a cold pie of mashed potatoes, spiced with ají and filled with seafood.

While the traditional causa is filled with tuna-fish, a crab-filled causa is a delicious variation that has become quite common in recent years. Other fillings include chicken, octopus, and fried fish. Causa recipe.
