Escabeche: Escabeche is a dish of Spanish origin (though some maintain it derives from Persian sikbag or "acid food"). Popular in both Spanish cuisine and Provençal cuisine, escabeche is a common Peruvian dish consisting of poached or fried fish marinated in an acidic mixture (vinegar and lime juicy) before serving.
