Andina Cuisine:
The innovative culinary style that appeared in Peru
in the late 80s and has since been fundamental for the
impressive evolution and growth of Peruvian cuisine.
It's characterised by the rescue of ancient Peruvian
ingredients and recipes, the quest for innovation, and
the use of modern international cuisine techniques and
know-how. Founded by gastronomic critic Bernardo Roca
Rey and chef Luis la Rosa, it's mainly based in Lima.
