Quinoa: A species of goosefoot grown as a crop primarily for its edible seeds. It's original to the Andes, where it was of great nutritional importance in pre-Columbian Andean civilizations. A pseudocereal rather than a true cereal, as it is not a grass, quinoa is today highly appreciated for its nutritional value, as its protein content is very high (12%–18%). It has been recently rediscovered for gastronomic purposes by the Novo Andina Cuisine movement.
