Tiradito: Similar to ceviche but subtler in taste and presentation, tiradito is a cold dish made with long slices of fish marinated in lime juice. Unlike ceviche, though, it carries no onions.

Tiraditos can be done with a wide variety of fish and shellfish, most commonly with a white-meat fish (such as lenguado and corvina) or octopus. The marinade allows for variations too, according to its main ingredient: ají amarillo, rocoto, olive oil, etc. Tiradito recipe.
