Peruvian Cuisine Glossary: Tumbo

Tumbo: An Andean fruit with an acid, bitter-sweet taste. Belonging to the Passiflora family (same as passion fruit), it has a quite thick skin and orange pulp. Tumbo is mainly used in the preparation of sauces and cocktails.
