With a history that spans over 25 years, Costanera 700 is probably the first up-scale nikkei restaurant (that is, a restaurant with a Peruvian-Japanese cuisine). Created and managed by legendary chef Humberto Sato (nowadays together with his son Yaquir), Costanera 700 has long set standards for the intuitive and successful fusion of Peruvian and Japanese culinary traditions, a blend that has been modifying the landscape of Peruvian gastronomy for the last 10 or 15 years (for example, increasing the rawness –and freshness– of ceviche or inspiring the tiradito). Decorated with Japanese lamps and a bamboo-covered ceiling, Costanera 700 is located on the ocean-drive, at one of the extreme ends of Miraflores. It is widely appreciated for its chita (a tender, white-meat fish, sort of a grunt): in particular, the chita a la sal, baked in a thick crust of salt. Equally delicious are the hot ceviche of camarones (prawns) or the crab claws covered with shrimp and glacé garlic. The menu includes some more traditional Japanese delicacies, such as rolls and tempura (though all with a Peruvian touch). Prices are not cheap, but the food and service fully deserves it.
