Peruvian chef Jan van Oordt and his Japanese colleague Hajime Kasuga have reinvented their national cuisines into a thrilling fusion of rice, seafood and spices -both oriental and native.

The graceful balance of sweet and bitter in their recipes is most impressive, as in the sashimi Nijai (sole with a Thai-style coconut sauce), the wok rice dishes, and the scallop philly (scallops wrapped in crispy rice threads with sweet miso sauce). Also outstanding the sesame maguro, rare-grilled tuna fillets with sesame seeds.

Prices are somehow expensive, but the food absolutely deserves it, as minimalist decorated Osaka is probably Lima's best oriental fusion restaurant.
