Located in an unpretentious and slightly unsafe part of town, Chez Wong has become one of the top-rated seafood huariques in Lima. Actually, in not even a huarique. Javier Wong, the chef, embraces a sort of friends-only philosophy regarding his cooking: in order to eat here, you need to make a reservation at least the day before. There isn't even a menu. Wong decides the day's dishes according to what is the freshest seafood he can get in the local markets. Usually, a meal consists of a starter and a main plate. The place is absolutely austere: bare walls, ten tables, and the kitchen burners at one end of the room. The front door is always closed and there are no signs whatsoever. Again: without a previous reservation, nobody gets to lunch here. The cuisine is delicious, inexpensive, and navigates between plain Criollo and Peruvian-Chinese traditions.
