Panchita

Panchita is the latest restaurant launched by super-star chef Gastón Acurio, the creator of renowned eateries Astrid & Gastón and La Mar. And much as La Mar is a reinterpretation of traditional cevicherías (combining the traditional cuisine with modern techniques and an impeccable quality), Panchita does the same with criollo cuisine. And does it incredibly well.

The extensive menu offers all the classics, from lomo saltado to aji de gallina, from anticuchos to pastel de choclo. Some are cooked the traditional way, like they were done 50 years ago in the cuisine of a typical limeño family. Some dishes, though, have a contemporary twist; in both cases, the results are mouth-watering.

Anticuchos are the specialty. Great also the tamales appetizer, and the 21-day cochinillo (suckling pig).

The atmosphere is cosy and simple, the crowd cheerful. At the bar, near the entrance, a myriad of pisco-based drinks are served. The place is usually at full capacity all day long, so reservations are highly recommended.
