A graduate from the Culinary Institute of America, Pedro Miguel Schiaffino worked in Italy (at the renowned Dal Pescatore, a Michelin 3-star restaurant) before embarking in his own project.

The only chef in Lima to use and research Amazonian ingredients, Schiaffino has created an eclectic cuisine that takes inspiration in his Peruvian, Italian, and Cuban heritage. Excellent the cabrito braceado en chicha de jora (barbecued kid seasoned in a purple-corn brew).

Located in a tranquil street of San Isidro, Malabar features an essentialist décor and a classy bar that serves a remarkable Pisco Punch, prepared according to a 1850-recipe original from San Francisco.
